Mini Italian Sausage Subs

As a mom of two boys (one with severe food allergies to egg, nuts, and soy) I'm always looking for new safe and kid-friendly recipes that I can cook in under 30 mins. Rather than serve plain ol' hotdogs again, why not try a playful alternative—mini sweet italian sausage subs? I can guarantee the kids will love to help garnish them and may even ask for a second helping : ) Recipe enclosed below. Enjoy!

- Olive Oil
- 1 Large Onion (sliced)
- 1 Large Yellow Pepper (sliced)
- 1 Package Mini Sweet Italian Sausages
- 1 Package Mini Sweet Sub Rolls
- Yellow Mustard

Coat the bottom of (2) non-stick skillets with a few turns of olive oil and preheat both pans over medium heat. 

In the first skillet:
Add the mini sausages, 6 Tablespoons of water, and cook covered for 12 minutes. Uncover and continue cooking sausages over medium heat until cooked through (about another 15 minutes).

In the second skillet:
Add the peppers and onions and cook uncovered for about 15 minutes until tender.
*Note: Be sure to turn the sausage, onions and peppers often!

Place the sausage on the rolls and garnish with sautéed onions, peppers and spicy yellow mustard. Pairs great with most sides!
